The Run Down On Sour Beer Styles
About us....
Berliner Weisse
A variation of the wheat beer style from Northern Germany. Often unfiltered this style of beer is characterized by being refreshingly tart. Hop bitterness is generally low or even not perceived and it generally has a high carbonation. It can be made from combinations of malted barley and wheat, with the stipulation that the malts are kilned at very low temperatures to minimise colour formation. The fermentation takes place with a mixture of yeast and lactic acid bacteria, a prerequisite that creates the lactic acid taste, a distinguishing feature of Berliner Weisse.
Gose
A warm fermented beer that originates from Goslar Germany. Pronounced “go-suh” this style of beer is characterized by being refreshingly tart. They are generally pale in colour and are often not filtered. Hop bitterness is generally low or even not perceived and most often they have a high carbonation. This style is characterized by the use of salt, which emphasizes their citrusy tang.
Kettle Sour
In a kettle-soured beer, the brewer adds lactobacillus to the wort (unfermented beer) before fermentation. More specifically, they add it while the wort is in a brewing vessel called the “kettle" (a stainless steel mash tun). Thus the name “kettle souring.” The liquid is boiled, cooled, and lacto-dosed (rather than just boiling and cooling it to be ready for yeast). By adding the bacteria at that point, the brewer is able to sour the beer in a matter of hours rather than months. Kettle Souring is used to make both Berliner Weisse and Gose styles of beer.
